Half-cup dried cranberries
Half-cup sun flower seeds, sliced almonds, pecans or walnuts
Cup of thinly sliced celery
Cup of shredded carrots
Two-cups of green cabbage, chopped up small bite size pieces
Two-cups of purple (some call it red) cabbage, chopped up small bite size pieces
One red bell pepper, chopped up small bite size pieces
One-cup sun dried tomatoes, chopped up small bite size pieces or regular tomato
One large size Granny Smith green apple, chopped up small bite size pieces
Mix above ingredients in a large bowl. Cover bowl and place in the refrigerator. Chill for two hours before serving.
One-cup olive oil
One-cup apple cider vinegar
One -cup sweet chili sauce
Half cup orange juice (no pulp)
Mix together and shake very well. Pour lightly over portion of salad mixture before serving. Keep dressing in the refrigerator when not using. Shelf life in the refrigerator is one week.
Please note: The above ingredients for Yoda’s salad should last 3-4 days and keep it’s freshness in the refrigerator. This is a lot of salad. You can make smaller servings. You can add any kind of extra protein as needed or your own favorite salad dressing. Sweeten the dressing with honey if you want to. Eat Healthy.
